Chicken Soup with Dumplings – Sup s Kletzkami

Easy soup with plain dumplings – kletzki. Was very popular in my childhood, replaces homemade noodles.

Chicken Soup with Dumplings

Yield 2-3 servings

1/2 chicken breast with rib, skinless
1 carrot
1 celery stalk
1/2 onion

For soup:
4-5 oz. boiled chicken breast meat
4 cups chicken broth
1/2 carrot. sliced in sticks
1/2 onion, chopped
1/2 celery stick. chopped
1 egg
1/2 cup all-purpose flour
salt and pepper
parsley, chopped

Put the chicken breast, carrots, celery and onion in a large soup pot and cover with 5-6 cups of cold water to cover. Bring to boil and cook in low heat, uncovered, until the chicken meat falls off of the bones, skim off foam. Discard vegetables, take meat off of the bones and set aside. Cool broth and discard all chicken fat from the surface, add some in dumplings dough, if needed.

Bring to boil about 1 quart of water in small saucepan. Mix together egg (and chicken fat if using), pinch of salt and all flour to make soft dumpling dough. Add 1 tbsp. milk if dough is too hard. Use two teaspoons and bring small pieces of dough into boiled water, cook 1-2 minutes, stirring to prevent sticking to the bottom. Dumplings can also be cooked in soup, but it can makes soup opaque. 

Strain broth. Sauté carrots, celery and onion. Season the broth with salt and pepper, add sautéed vegetables, cooked dumplings and chicken meat. Bring to boil, turn heat off and let soup stay covered about 5 minutes. Add chopped parsley and serve.
