Smoked Mackerel Kedgeree. Remake

One hot, hearty and colorful breakfast. Last time it was Smoked Mackerel, Cardamom and Spinach Kedgeree, now it’s little different. Inspired by Girl Interrupted Eating Blog.

Yield: 2 servings

1 cup cooked rice (I used Jasmati)
2 eggs
1 tbsp. of Garam masala
1 tsp. of turmeric
1/2 tsp. coriander seeds
1 fillet (2 oz.) of smoked mackerel
1 clove of garlic
1/4 cup green peas

Cook the rice. Hard boil the eggs. Flake smoked mackerel. Cook green peas (I used microwave).

Heat medium pan in medium heat, spray with cooking spray, sauté the onions and garlic until soft, add Garam masala, turmeric, coriander seeds and cook until fragrant.

Add the rice, mix well, add peas and mackerel, cook about 1 minute more. Serve with halved eggs.

1 serving is about 255 calories
