Dirty Rice (Rice with Chicken Liver and Mushrooms)

One more chicken liver dish in our menu. Easy, funny looking and very tasty. I served it with plain cabbage, dill and sunflower seeds salad.


Yield: 2 servings

1/3 cup long grain rice (I used Kasmati)
4 medium mushrooms – white or baby bella, chopped
6 pieces of chicken liver –about 1/2 lb.
1/2 medium sweet onion, chopped
2/3 cup chicken broth
salt and pepper

Cook the rice in chicken broth according to the package instructions. 1 cup of cooked rice is needed.

Heat the large pan on medium heat, spray with cooking spray. Sauté onion until slightly golden. Add mushrooms, cook 2-3 minutes more. Finely chop chicken liver, add to pan and cook, stirring, until done – 5-7 minutes. Add cooked rice, mix well, taste for seasoning. Serve hot.

1 serving is about 230 calories

For salad:

Yield: 2 servings

3 cups shredded cabbage
1 oz. sunflower seeds, roasted
3-4 dill sprigs
1 tsp. sunflower oil

Combine cabbage and salt in a bowl, press out moisture with your hands. Add minced dill, sunflower seeds and oil.

1 serving is about 130 calories
