Tomato Green Bean Soup

Fresh Jersey Tomatoes and green beans for light and easy soup. Adapted from Taste of Home.


Yield: 4 servings

1/3 medium onion, chopped
1/2 medium carrot, chopped
4 cups chicken or vegetable broth
2 cups fresh green beans, cut into 1-inch pieces
1 garlic clove, minced
2 cups diced fresh tomatoes without skin
fresh basil
salt and pepper

Spray large saucepan with cooking spray, sauté onion and carrots for 5 minutes, add tomatoes, cook 5 minutes more. Stir in the broth, beans and garlic; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until vegetables are tender. Add salt and pepper for taste, serve with fresh chopped basil or parsley.

1 serving is about 45 calories
