Russian Tarragon Drink – Tarkhun

Emerald soft drink from my Soviet childhood – and a book about the Wizard of Emerald City (the Soviet remake of The Wizard of Oz) always together in my memories. I loved to read and I loved this deep color fresh-n-sweet drink.

The history of this drink is a bit similar to the history of Coca-Cola, it also made by a pharmacist – he threw a healing (tarragon) syrup with plain soda water and got a refreshing drink.


about 1 cup of packed tarragon (estragon) leaves (medium bunch)
1/4-1/3 cup sugar (or more)
1/4 cup lemon or lime (or mix) juice
2 cups of water

Bring water to boil, add sugar, let dissolve, add chopped tarragon leaves and turn heat off. Cover and let stay until cool and leaves change color, about couple hours. Strain through a sieve, add lemon or lime juice.

Serve with ice and chilled seltzer or plain carbonated water.

I add drop of green food color.
