Strawberry Meringue Ice-Cream

Light and fluffy ice-cream without any fat.

Yield: 6 servings

2 egg whites
1/4 cup caster sugar
1 tsp. plain gelatin powder
2 cups strawberries, sliced, pureed

Make meringue: combine egg whites, gelatin and caster sugar, whisk and heat it in a double boiler until the sugar and gelatin dissolves completely. Whip for soft peaks and gently add strawberry puree. Freeze.

1 serving is about 56 calories
