Marinated Young Garlic Bulbs

I made this garlic in first time and it needs time to be prepared, so I hope to update post in winter. Recipe adapted from Russian cooking sites.

8 bulbs of young garlic
1 small beet root (optional)
4 cups of water
4 tbsp. white vinegar
2 tbsp. sugar
3 tbsp. kosher salt
2 bay leaves
2-4 peppercorns
2-4 whole cloves

Wash garlic, remove almost all husks layers, but last. Put bulbs into two prepared jars, pour boiling water and let cool and stay about 2-3 hours, drain, repeat with boiled water one more time, drain, add bay leaves, peppercorns and cloves in jars, set aside. Add sliced beets into jars (optional) for pink color.

Bring to boil water, add salt and sugar, mix to dissolve, remove from heat, add vinegar. Pour hot marinade into jars, close with lids and let cool. This garlic needs 3-4 months to prepared.
