Great dessert – meringue or soufflé with berries or fruits for one. Low fat, low sugar, rich of protein. Can be made with any fruits or pie fillings. Cooked egg whites has taste and smell of raw eggs, so use fruit and berry syrups or honey, or add vanilla and cinnamon if needed.
Yield: 1 serving
1 large egg white
1 tsp. sugar or berry/fruit syrup, or honey, or sugar substitute
1/3 cup strawberries, fresh or frozen
1/2 tsp. sugar (optional)
Prepare ramekin bowl (microwave-proof), sprinkle inside with cooking spray. Slice strawberries, put into ramekin, sprinkle with sugar, if needed. Cook at HIGH for 30 seconds.
Whisk the egg white and sugar (add more if needed) until soft peaks form. Put on top of strawberries, run a knife along the walls of ramekin. Cook on HIGH for 1 minute.
Merengue seem to raise high, but then it lowers again. Turn it onto a plate and serve.
