Tomato or V8 Crepes

Easy way to eat your vegetables! These savory crepes are great with most fillings or as is. Fun orange color and great taste.


Yield: 4 servings (2 crepes each)

2 large eggs (I used Better-n-eggs)
11 oz. tomato or V8 juice (I used 2 cans of low sodium V8)
2/3 cup all-purpose flour
1/2 tbsp. oil (I used unfiltered sunflower oil with great smell)

Combine all ingredients, beat them about minute to form bubbles.

Heat a medium non-stick pan (I have cast-iron pan for crepes only), spray it with cooking spray.

Pour 1/3 cup of batter (or enough to cover the bottom of pan) into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip with spatula, be careful with edges. Cook for another 10 seconds and remove to the plate.

Continue until all batter is gone. Serve hot or use it for stuffing.

1 serving  is about 223 calories
