Moldavian Red Pepper and Apple Salsa – Orange Adjika

When my friend from Moldova gave me this recipe I thought again: “Small world”, I already had delicious Green Adjika recipe from my friend from Latvia. This one has funny orange color because of carrot. Sweet, sour and hot, great for salads and sandwiches. Adjika, here, mean hot sauce.

Moldavian Red Pepper and Apple Salsa – Orange Adjika

1 big red sweet pepper
1 small Granny Smith apple
3 cloves garlic
1 fresh jalapeño or any hot pepper in your choice
1 bright orange carrot
1 tsp. salt (or to taste)
1 tbsp. vinegar (white or apple)

Finely chop in blender apple, peppers, carrot and garlic, add vinegar and salt to taste. Add sugar if needed, but remember that carrot and apple are sweet. Stir well and leave at couple hours (for the final dissolution of sugar and salt). Store in the fridge.

My friend brings adjika to boil, add some oil (2-3 tbsp.) and cook about 20 minutes to made sauce, which can be preserve in jars. I prefer fresh.
