Peanut Butter and Tomato Soup with Curry

New great combination for me – tomato and peanut butter. Great West African soup replica, easy to made, full of taste. Adapted from Epicurious.Com.

Yield: 1 servings

1/4 medium onion, chopped
salt and black pepper
1/2 tsp. curry powder (preferably Madras)
1/2 cup diced tomatoes in juice
1/2 cup hot water or broth
1 tbsp. creamy peanut butter
chopped fresh cilantro

Spray heavy saucepan with cooking spray, heat over moderate heat, add onion and cook, stirring occasionally, until softened, about 2-3 minutes. Add curry powder and cook, stirring frequently, 2 minutes. Add tomatoes (with their juice), 1/4 cup of water and simmer, uncovered, 5 minutes. Stir 1/4 cup of hot water into peanut butter until smooth and add to soup. Simmer, uncovered, stirring occasionally, 5 minutes. Stir in cilantro before serving.

1 serving is about 135 calories
