Russian Lazy Dumplings–Lenivie Vareniki

This is a quick and hearty breakfast, easy and lazy version of vareniki s tvorogom. In Russia it is considered that the farmer cheese (tvorog) is very good for kid’s health, but children do not like it by itself and only eat it in these dumplings. It could be found in the menu of most kindergartens. The best dumplings in the world are made by my mom. I made my version, it can be described like large ricotta gnocchi.

Russian Lazy Dumplings–Lenivie Vareniki

Yield: 2 servings

1/2 cup whole milk ricotta* or farmer cheese (with very small curds)
1 tsp. sugar
pinch of salt
1 egg or 1/4 cup egg substitute
1/2 – 2/3 cup all-purpose flour (some add semolina or
cream of wheat)
Melted butter or sour cream and sugar for serving

*If using ricotta, I recommend add some lemon juice into it, or it can be too plain in taste. Fat free ricotta is just ok.


Bring to boil 2-3 quarts water, add some salt.

Meanwhile, combine ricotta or farmer’s cheese (tvorog) with egg, pinch of salt and sugar.  Add enough flour to make soft dough, that doesn’t stick to your fingers. Divide the dough in halves, gently roll each part into 1′ thick log, cut in 1/2′ pieces with sharp knife.

Cook the dumplings in small batches in boiled water about 2-3 minutes, just let them float to top and let water boil again. Gently remove with slotted spoon, serve hot with sweetened sour cream or melted butter.
