Great new way for salmon – burgers. Smoked salmon add great taste and flavor. I used baked smoked salmon instead of plain, it has a little more fat. Recipe adapted from Martha Stewart Site.
Yield: 4 servings
8 oz. very cold skinless salmon fillets
2 oz. baked smoked salmon, flaked
4 hamburger buns, split
2 tbsp. mustard
Pulse salmon chunks in a food processor until chopped but not smooth. Transfer to a bowl, and stir in smoked salmon. Divide mixture into 4 equal pieces. Shape each into a 3 1/2-inch patty.
Heat a large nonstick skillet over medium-high heat. Toast buns, cut sides down.
Cook patties until golden brown and almost cooked through, about 1-2 minutes per side. Do not add oil or butter into pan, burgers are fatty.
Spread some mustard onto each bun half. Sandwich the burgers between buns.
