Shaved Carrot and Cucumber Salad

A simple fresh salad that can be made ahead. Crisp thin slices of carrots and cucumbers, sweet pepper and onion in plain marinade. Great for lunches and picnics. Adapted fromĀ Taste of Home.

Yield: 1 servings

1 medium cucumbers, thinly sliced
1 medium carrots, thinly sliced
1/6 medium sweet onion, halved and thinly sliced
1/4 yellow sweet pepper, sliced
pinch of salt
1/2 tsp. sugar
2 tsp. white vinegar

Shave vegetables by sharp knife or using a mandolin set as thin as preferred. Sprinkle with salt. Combine sugar and vinegar, pour over vegetables; toss to coat. Cover and refrigerate for at least 1 hour.

1 serving is about 65 calories

    Seems like a very good and light recipe, will most definitely try to make it. Do you know for how long this can be refrigerated?

    Hi! Pickled vegetables are usually well kept in the refrigerator. I think at least a week.
