Moldavian Tomato Soup with Pelmeni – Bureachiţă

Spring (garden) cleaning time! We need something fast and easy. And that means it’s time for homemade frozen chicken filling dumplings – pelmeni. Simple, nutritious and quick soup recipe is here. It would be Italian if you use tortellini, add thyme, spinach and Parmesan.

Moldavian Tomato Soup with Pelmeni – Bureachiţă

Yield: 3 servings (10 pelmeni in each)

1/2 medium carrot, diced
1/3 parsley roots, diced
1/2 yellow onion, diced
1 garlic clove , minced
30 pelmeni (I used my chicken filling pelmeni, but recipe call pork filling)
3 tbsp. tomato paste or 2 cups of tomato juice (reduce the amount of water) or 2 whole fresh tomatoes (depend of season)
3 cups of hot water or chicken broth
salt and pepper
parsley for garnish
sour cream for garnish (optional)

Spray a soup pot, with cooking spray and heat over medium high heat. Sauté carrot, onion and garlic, about 5 to 7 minutes. Add chopped tomatoes or tomato paste, cook about minute, add hot broth or water.

Add pelmeni in boiled soup and cook 5-6 minutes or according to package instructions (if using bought dumplings). When it’s almost done, season with salt and pepper.

Serve hot with chopped parsley.
