Papaya Salad with Feta Dressing and Papaya Salsa

I bought very good papaya. Sweet and tasty. We ate half as is, but other half I used to make great lunch salad with feta dressing and tasty salsa for dinner’s pork. Recipe of salsa adapted from

For Papaya, Mango, Cucumber and Feta Salad:

Yield: 1 servings

1/2 mango (I used champagne mango), chopped
1/4 cup ripe papaya, chopped
1/3 cup English cucumber, chopped

2 tbsp. crumbled feta (low-fat is ok)
1 tbsp. lemon juice
1 tsp. olive oil
salt and pepper to taste

Combine mango, papaya, cucumber and feta. Mix feta, lemon juice and olive oil, pour on top of the salad, mix, add salt and pepper to taste if needed.

1 serving is about 127 calories


For Papaya Salsa:

Servings: Makes about 2 cups

2 tbsp. cilantro leaves
1 cup cubed papaya
1/4 cup cubed red bell pepper
1/4 cup diced sweet onion
1/2 jalapeno pepper , seeded and minced
2 tablespoons freshly squeezed lime juice

Put the ingredients in a small bowl, mixing with a spoon until everything is thoroughly melded in. Cover and refrigerate until you are ready to use.

1 serving is about 85 calories
