Overnight Yeast Eggless Pancakes – Postnie Oladushki

Very common Russian breakfast – oladyee or oladushki. This is easy and light recipe for busy people. Just flour, yeast and water with little salt and sugar. Neither eggs, nor any fat. Go well hot with honey, homemade jams or sour cream.

Overnight Yeast Eggless Pancakes – Postnie Oladushki

Yield: 6 servings (4 pancakes each)

1 3/4 – 2 cups warm water
2 cups all-purpose flour
1 tsp. dry yeast
1 tbsp. sugar
1 tsp. salt
cooking spray

Dissolve yeast in warm water, add sugar, salt, flour and knead the dough. Cover and place in refrigerator overnight.

Spray a griddle or frying pan with cooking spray and heat over medium high heat.  Do not stir batter.Scoop the batter onto the griddle, using approximately 1 1/2 tbsp. for each pancake. Cook on both sides and serve hot.

1 pancake is about 39.5 calories
