Banana Bread Pudding

Great dessert with banana sweet taste. I love it cold with good big cup of tea. Adapted from About. Com – Low Fat Cooking.


Yield: 5 servings

2 slices white toast bread, cut into cubes (90 calories each)
1/2 cups milk (1%)
4 oz. eggs substitute (Better-n-eggs)
1 tbsp. white sugar (or more if needed)
1 tsp. vanilla
1 medium ripe banana, chopped

Preheat oven to 350 degrees. Spray 5-6 muffin cups with nonstick cooking spray.

Place bread cubes in a large bowl and cover with milk. Toss so the bread can absorb the liquid.

In a medium bowl, combine eggs, sugar, vanilla and bananas. Combain banana mixture and soaked bread.

Pour the mixture into muffin cups and bake for 30 minutes until set.

Serve warm with ice-cream or caramel sauce or cold with good cup of tea.
