Plain Sour Cream Cookies

Simple soft sponge biscuits. Can be served just like that, or made into sandwiches with jam, peanut butter or chocolate paste. Small butch, low calories.

Plain Sour Cream Cookies

Yield: 12 servings

1 medium egg
4 tbsp. sour cream
4 tbsp. sugar
1/2 cup all-purpose or whole wheat flour
1/2 tsp. baking powder
pinch of salt
vanilla extract or lemon zest

Preheat oven to 375F.

Beat egg and sugar until mixture has thickened and turned a pale yellow. Add sour cream, mix well. Flour, baking powder and salt are mixed together. Add the liquid ingredients to the dry ones and mix only to combine.

Drop by teaspoonful 2 inches apart onto prepared cookie sheet. Bake 10 to 12 minutes or until golden.

1 serving is about 48 calories
