Herring in Sour Cream Sauce

This recipe I got from a friend from Israel, where it’s called “Polish herring” (Śledzie w śmietanie) Instead of sour apples, fresh or pickled cucumber can be added. Use good pickled herring, not marinated or kippered. If herring is very salty, soak it in milk or black tea for an hour.

Herring in Sour Cream Sauce

Yield: 4 servings (about 60 g each)

1/2 herring fillet, Atlantic, Pickled (100 g ~ 3.5 oz.)
1/4 Granny Smith apple
1/8 cup sweet onion
3 tbsp. sour cream
1/2 tsp. mustard
1/3 tsp. sugar
1/2 tbsp. lemon juice
2-3 sprigs fresh dill
1 tsp. frozen lingonberry or cranberry for garnish (optional)

Herring in Sour Cream Sauce

Finely chop herring. Mix with grated apple, finely sliced onion, sour cream, mustard, sugar, lemon juice and some roughly chopped dill. Let stay in cold place about 20 minutes, serve with piece of bread or hot boiled potato.

1 serving without bread is about 96 calories
