Baked Apple Cranberry Stuffing
Good side dish. Easy and delicious.

3 tbsp. olive oil
1/2 cup sliced celery
1 cup chopped onion
10 slices (about 5 cups) bread cubes (I used rosemary sourdough bread from Whole Foods and some Italian baguette)
1/2 medium Granny Smith apple, chopped
1/2 cup dried sweetened cranberries
2 cups chicken broth
2 tbsp. sage leaves, chopped
1 tbsp. thyme leaves, chopped
salt and black pepper
Preheat oven to 350°F. Dry bread cubes in oven about 5-7 minutes.
Heat oil in saucepan. Add celery and onion and cook until tender.
Mix bread, chopped apple, dried cranberries, sage, thyme and celery mixture in a large bowl. Add salt and pepper to taste. Gradually add chicken broth, tossing until moistened. Spoon stuffing evenly into pan.
Bake30 minutes or until browned.
