Highway 55 Slaw with Buttermilk Dressing

Two cabbage, carrot, red onion and parsley with tangy dressing – great combination. Recipe adapted from Cowgirl Cuisine: Rustic Recipes and Cowgirl Adventures from a Texas Ranch cookbook. Really great book with plain and delicious recipes, stories and photos.


1/2 cup mayonnaise (I used homemade)
1/2 cup well-shaken buttermilk
2 tbsp. creole mustard
2 tbsp. apple-cider vinegar
several dashes of hot sauce (Tabasco is great)
1/2 tsp. kosher salt
1/4 tsp. ground black pepper
1/2 small green cabbage, very thinly sliced
1/4 small red cabbage, thinly sliced
1/4 red onion, thinly sliced
1 carrot, grated
1/4 cup fresh parsley

In large bowl, whisk together the mayonnaise, buttermilk, mustard, vinegar, hot sauce, salt, and pepper. Add cabbage, onion, carrot, parsley and toss.

Sometimes I used Kefir instead of buttermilk. Kefir is a fermented milk drink, very popular in Russia and became popular in America too, take a look at Life Way Products.
