Meringue Roll with Apple Sauce (Gluten Free)

It’s very soft and airy dessert with no fat at all. But you can add (like I did) whipped cream on top and some berries. Recipe adapted from great Russian blogger Chadeyka and some ideas from Eazy2cook blog.


4 egg whites
3/4 cup sugar
1/2 cup unsweetened apple sauce

Preheat the oven to 340F.

Prepare a Swiss roll pan by lining with parchment paper.

Beat egg whites in small bowl with electric mixer until soft peaks form, gradually add sugar, beat until sugar is dissolved (taste it with your fingers). Spread mixture evenly into Swiss roll pan, leaving a half-inch border. Bake about 18-20 minutes or until the meringue is browned lightly.

Cover a wire rack or cutting board with a sheet of baking paper. Sprinkle with some powdered sugar. Invert the meringue onto the paper, remove lining paper and cool.

Spread apple sauce over the meringue. Roll the meringue firmly from the long side, using the baking paper to guide the meringue as it rolls.

It’s really good to add some cranberry sauce to filling.
