Turkey and Tomato Tortilla Pie
It’s something between tacos and very lazy lasagna. Turkey and tortilla pie with taco spice, served with dollop of sour cream. Recipe adapted from MyRecipes.com

4 flour tortillas
2 tsp. vegetable oil
1 small onion, chopped
3 cloves garlic, chopped
1 tbsp. chili powder
1 tsp. ground cumin
1/2 tsp. cayenne pepper
1 tsp. dried oregano
Salt
1 lb. ground turkey
1 1/2 cup tomato sauce
2 oz. grated Cheddar
Sour cream (optional)
Preheat oven to 450°F.
Place a skillet over high heat. Mist tortillas with cooking spray and toast in skillet, turning once, until golden, 1 minute.
Warm oil in skillet over medium heat. Add onion and cook for 4 minutes. Stir in garlic, spices and salt; cook for 1 minute. Add turkey and sauté, breaking into small pieces, until cooked, 5 minutes. Add tomato sauce, bring to boil.
Place a tortilla on a baking sheet. Spread with one-third each of turkey mixture and cheese. Repeat with 2 more layers. Top with remaining tortillas; press to adhere. Bake 10 to 12 minutes. Let stand for 5 minutes before serving.
