Ground Chicken, Rice and Bean Burritos

Serve it with salsa and had great Mexican dinner. Taco seasoning recipe is from


1 lb. ground chicken
1 tbsp. olive oil
1/3 cup chicken stock
3 tbsp. taco seasoning*
1/2 cup fresh or canned corn
1 cup cooked white or brown rice
1/2 cup black beans, rinse and drained
8  flour tortillas
1 tbsp. shredded Cheddar cheese

* for taco seasoning mix together:

1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper


Warm flour tortillas, cover with damp kitchen towel.

Place a large skillet over medium-high heat; add olive oil. Add the ground chicken. Cook until brown, about 5-6 minutes, add the chicken stock, scraping up any brown bits on the bottom of the pot. Add taco seasoning.

Place few spoonful of the chicken mixture, rice, corn and beans on the bottom of a tortilla, don’t overfill it. Roll the short end of the tortilla over the filling, fold in the other two sides and then continue to roll it up until you have a tight burrito package.

Place burritos in a baking dish and sprinkle with cheese, place under the broiler for 2-3 minutes to melt the cheese.
