Golden Beet and Goat Cheese Terrine

This recipe is mix from many. I loved the idea and made terrine for our tastes.


12 oz.  goat cheese
3-4 tbsp. cream cheese
2-3 large golden beets
1 clove garlic, minced
2 tbsp. chopped parsley
salt and pepper to taste
balsamic for garnish

Roast beets in 350°F oven for 30 minutes or until fork-tender. Remove and allow to cool.  Using a paring knife, peel the skins off the beets and slice into thin (1/16″-1/8″) pieces.

Blend cheeses, garlic and parsley until very smooth.

In a plastic-lined mold, layer beets then cheese mixture. Season and repeat until mold is full, with beet layer on top. Fold excess plastic over the top and refrigerate at least 30 minutes to set.
