Hungarian Lecso (stewed peppers) with Eggs

In Russia, we eat cold Lecso as an appetizer, in Hungary it served hot with eggs and/or rice. So I had small jar of stewed pepper (without bacon) in my fridge and use it cold or hot.


1 bacon strip or cooking oil
1 onion, chopped or diced
1 garlic clove, minced
1/2 tsp. sweet Hungarian paprika
2 sweet pepper (yellow, green or red), seeded and cut into bite-sized pieces
2 ripe red tomato cut into bite-sized pieces
4 eggs

Sauté the onion, garlic and bacon. When it just turns yellow, stir in the paprika.

Add the pepper and continue cooking until soft. Add the tomato and continue sautéing until everything is soft.

Beat the egg and pour over the vegetables. As soon as it sets, even just in part, scramble everything together and serve with plain rice.
