Oven-Baked Chicken Skewers

Greek style chicken skewers in yogurt marinade, cumin and garlic flavor, soft and tasty.

1/2 cup plain whole-milk yogurt (preferably thick Greek-style)
2 tbsp. fresh lemon juice
5 garlic cloves, minced
1/2 tsp. ground cumin
4 extra large boneless chicken breasts, cut into large chunks
1 tsp. salt

Whisk together yogurt, lemon juice, garlic, cumin and salt in a large bowl, then add chicken, stirring to coat. Marinate, covered and chilled, at least 8 hours.

Skewer chicken pieces. Place skewers on a non-stick sprayed cookie sheet.

Bake in preheated 425°F oven for 20 to 25 minutes or until golden brown, Turn once during cooking. Serve over a bed of rice.
