Baked Peaches with Rum and Ice-Cream

Easy and quick summer dessert. Will be much better with toasted almonds, but… next time.


3 ripe peaches, halved and pitted
1 tbsp. brown sugar
1 tsp. butter
1 tsp. of dark rum
2-3 scoops of ice-cream

Preheat oven to 425°F.

Cut peaches in half and remove the pit. Toss peach halves with brown sugar and place them cut-side-up on the prepared baking sheet. Put small pieces of butter in the middle of the peach halves  and splash the rum over the peaches.  Roast until the peaches are tender, 20 minutes.

Top peaches with scoop of vanilla ice cream.

Serve immediately.
