Cauliflower Steaks With Cauliflower Puree

Fun looking dish, cauliflower steak looks like fantastic tree in the puree cloud. Recipe adapted from Group Recipes.


1- 1 1/2-lb. head of cauliflower
2 cups water
1-2 garlic cloves
1/2 cup whole milk, hot
1 tbsp. melted butter
dash of cumin powder
salt and pepper

Preheat oven to 350°F.

Using sharp heavy knife and starting at top center of cauliflower head, cut two 1-inch-thick slices of cauliflower, cutting through stem end.
Set cauliflower steaks aside. Bring to boil 2 cups water in medium saucepan, carefully add cauliflower steaks and cook 3-4 minutes; transfer to plate, remain water in saucerpan. Add cauliflower steaks to skillet, brush with butter and sprinkle with cumin, salt and pepper; bake until tender, about 10 minutes.

Cut enough florets from remaining cauliflower head to measure 3 cups. Add it in boiled remained water and sprinkle with salt and pepper. Bring to boil and cook until cauliflower florets are very tender, about 10 minutes. Strain. Transfer florets to blender. Add hot milk and puree until smooth.

Divide puree between 2 plates; top each with cauliflower steak.
