Lohikeitto or Finnish Salmon Soup

Great to taste and easy to prepare recipe adapted from Finnish Avaruusasema blogi.


about 1 lb. fresh or frozen salmon fillet
1-2 medium carrots
1 medium onion
1 small leek (or chopped chives)
2-3 medium potatoes (about 1 lb)
1 tbsp. butter
1 tbsp. flour
4 cups fish stock or water
1 cup heavy cream or half-n-half or milk
5 allspice
Chopped dill
Black pepper and salt

Peel carrots and cut into small pieces. Rinse the leeks, cut into rings and chop the onion. Sauté vegetables in butter in a large saucepan. Sprinkle the flour over the vegetables and stir.

Peel and chop the potatoes, add other vegetables. Pour the fish broth or water, add allspice. Cook until vegetables are soft (about 10-15 minutes).

If necessary, defrost fish fillet, remove skin and cut about 2 inch bite-size. Add the fish pieces and heavy cream or milk, stir and simmer for about 5-8 minutes. Check the taste and season if necessary. Sprinkle the top of the soup plenty of dill.
