Kaiser Pancakes (Kaiserschmarren)

Big fluffy pancake with risings. The “Kaiserschmarren” was created for Austrian Emperor Franz Josef and it is said, that he called it “Schmarren”, which can be translated as “nonsense”, but in a creative and nice way. Adapted from Austrian recipe.



3 eggs
2/3 cup cake or pastry flour
1/4 cup sugar
1/2 cup milk
pinch of salt
1 tbsp. raisins
walnut-sized lump of butter
confectioners’ sugar (powdered)
plum purée or fresh fruits


Separate the egg whites from the yolks. Mix the yolks, sugar, milk and flour.  Whisk the egg whites, add a pinch of salt and continue whisking until stiff. Carefully fold it into the egg yolk mixture.  Melt butter in a large pan, pour in the mixture and sprinkle in raisins.  Let cook on one side for a few minutes, turn over and tear into pieces with a fork.  Now let finish cooking (ideally in a buttered pan in a preheated oven).  Sprinkle with confectioners’ sugar and serve with plum purée or fresh fruits.
