Feta Dip (or Salsa) with fresh tomatoes

We fell in love with Mediterranean cuisine at first bite. We love soups, appetizers, salads, main courses and desserts. We love how it’s taste and how it’s smell. Oregano, oh, my! But we don’t like olives. I don’t know why, may be because they are bitter.

So this is dip or salsa with Greek feta but with no olives. Great with pita chips.

1/2 cup crumbled feta
1/2 cup ripe tomatoes, chopped
1/4 cup red onion, chopped
2 cloves garlic, chopped
1 tbsp minced oregano
2 tbsp minced fresh parsley
2 tbsp olive oil
2 tbsp lemon juice

Gently mix the ingredients together and drizzle with olive oil and lemon juice to taste.
