Sugar cookie fruit pizza

It’s very simple dessert. I used kiwi, strawberries and blueberries for filling. Pastry cream for “sauce”.  And coconut for “cheese”.


For sugar cookie I used recipe from with my changes:

2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1  cup white sugar
1 egg
1 teaspoon vanilla extract

Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.

In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.

Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

For plain pastry cream I used

1 cup milk
2 tbsp + 2 tbsp white sugar
1 egg
1 tsp cornstarch
1 tsp vanilla extract

In a heavy saucepan, stir together the milk and 2 tbsp of sugar. Bring to a boil over medium heat.

In a medium bowl, whisk together the egg, the remaining sugar and cornstarch. When the milk comes to a boil, drizzle it into the bowl in a thin stream while mixing. Return the mixture to the saucepan, and slowly bring to a boil, stirring constantly.

When the mixture comes to a boil and thickens, remove from the heat. Cool.
