Very colorful and bright dish. In my rice I added pineapple chunks, red onion, zucchini and red pepper.
1 cup cooked rice
1 pineapple, cut into chunks
1 medium carrot, diced
1/2 cup corn
1 sweet pepper
garlic cloves, finely chopped
1 small red onion, finely chopped
1 tbsp lime juice
1 tbs soy sauce (or more, to taste)
Heat a little oil in a large frying pan, add garlic and onion, cook for 1 minute, add the carrot, corn, zucchini and pepper and cook together for another 4 minutes. Add the rice, enough soy sauce and lime juice. Add pineapple chunks, stir constantly for a few minutes then remove from the heat.
