Barbecued Beef Short Ribs

Adapted from Taste of Home recipe. My first try to make a  boneless beef short ribs. Very good result. There are several options for making this kind of meat – you can roasted, boiled and then stewed in sauce, baked and stewed in sauce, or grilled. I used the first method and I got a lot of sour-sweet and very rich sauce. Its very tasty with just bread too.

3 to 4 pounds bone-in beef short ribs
1 tablespoon canola oil
2-1/2 cups water, divided
1 can (6 ounces) tomato paste
1 cup ketchup (I used organic)
2 garlic clove, minced
3/4 cup packed brown sugar
1/2 cup chopped onion
1/2 cup white vinegar
2 tablespoons prepared mustard (omit)
1/2 teaspoons salt
1 tablespoon Worcestershire sauce

In Dutch oven, brown ribs in oil. Add 2 cups water; bring to a boil. Reduce heat. Cover and simmer for 1-1/2 hours; drain. I remain 1/2 cup stock for sauce.

Combine the tomato paste, ketchup, garlic, brown sugar, onion, vinegar, mustard, salt, Worcestershire sauce and remaining water (I used remaining stock). Pour over ribs; bring to a boil. Reduce heat; cover and simmer for 1 hour or until meat is tender. Serve with noodles or rice.
