Rice Fritters

Go really good with smoked trout & crème fraiche.


1 cup cooked rice
1 egg
2 tbsp. cornstarch or all-purpose flour
2-3 tbsp. cheddar cheese, grated (optional)
Vegetable oil for frying

Combine all the ingredients except oil and mix well. Heat oil in the pan. Add a tablespoon of batter, pressing down slightly to form a flat fritter. Cook until golden in both sides. Drain fritters on paper towels to absorb excess oil.
