Baked Salmon With Mango Salsa

Fresh and easy spring salmon. Adapted from Food.Com.

4 salmon fillets
sea salt and pepper
garlic powder

For salsa:

1 cup finely diced mangoes
1/2 cup finely diced red pepper
2 tbsp. minced sweet onions
2 tbsp. minced parsley
1/4 tsp. sea salt
3 tbsp. olive oil
1 tbsp. lime juice

To make the mango salsa: combine all ingredients in a small bowl, and refrigerate for about 20 minutes.

For the baked salmon: preheat oven to 400F. Place fillets on a baking sheet lined with parchment paper. Season each fillet with a pinch of salt, pepper, and a large pinch of garlic powder. Bake for 10-12 minutes.

Serve with mango salsa.
