Spiced Red Cabbage with Prunes
Adapted from BBC Good Food.

1 large onions , chopped
1 tbsp. olive oil
1 tsp. mixed spice (cinnamon, cloves, cumin, coriander)
1 lb. red cabbage, shredded
1/2 cup chicken stock
1 tbsp. red wine vinegar
3 oz. pitted prunes, chopped
Sauté the onion in the oil until beginning to soften. Tip in the mixed spice. Add cabbage, chicken stock, vinegar and prunes. Cover and cook for 30 minutes, stirring, until tender.
