Wheat Couscous Pancakes


1 cup dry wheat couscous (I use Near East brand)
1 1/4 cup water
1 large egg
salt and pepper
oil for cooking

Combine the couscous, salt, pepper and boiled water. You can use spice from box for more flavoring. Cover, let stand 5 minutes. Add the egg, mixing well.

Spoon 1 tablespoon of batter per pancake into the preheated skillet, making 3-4 pancakes at a time. Remove pancakes from the skillet cover and keep warm. Repeat with the remaining batter.
