Pickled Tomatoes in Sweet Marinade

This recipe gave me my friend Janochka from Latvia. Every year I promise myself to make more jars and do it. Great in winter season with stew, mashed potatoes etc. One of the traditional dishes for Thanksgiving in our family. Tomatoes are not too acidic, moderately sweet, very tasty.

Pickled Tomatoes in Sweet Marinade

For two 3 pints (1.5 liter) jar:

25-30 plum tomatoes
1 sweet pepper, remove seeds
8 cups water
2/3 cup sugar
2 tbsp. salt
2 tbsp. apple cider vinegar 5%

Cut pepper into 4-6 parts. Put pepper at the bottom of the jars.

Boil 8 cups of water. Blanch tomatoes in boiling water for 2 seconds and pack tightly into the jar. Fill the jar up to the top of the water in which we blanch the tomatoes. Cover with a lid.

After 20 minutes poured the tomato water into a saucepan, add sugar, salt and apple cider vinegar. Boil, pour into the jar and close lid. Sterilization is not necessary. Ready in 1 – 2 months.
