Sweet Potato Noodles Pad Thai

I’m here again and trying to revive my cooking mojo. I found very interesting recipe for Meatless Monday – Pad Thai (originally – stir-fried rice noodle dish) with sweet potato noodles and peanut-Sriracha sauce. We mix it with quinoa and it was a really good dinner. Recipe adapted from Lemon and Basil.

Chicken Tenderloins on Roasted Cauliflower with Lemon and Mustard Sauce

Easy and light  dinner. Recipe adapted from Taste.com.au (“Delicious”, July 2007, by Kate Nichols). I added some grapes to pan with cauliflower and it gave a little sweet kick.

Spiced Beef and Eggplant Stew

Russian Beets, Carrot and Cheese Salad – Mistress

Salad Mistress – Lubovnitsa. There is three popular Russian (Soviet) salads in one – beets and nuts, carrot and raisins, cheese and garlic. In my opinion, once it was not enough space for all dishes on table and someone folded three salads in one. It turned out quite well. It’s still mayonnaise owned cuisine, but come on, don’t you love coleslaw? It’s crunchy and creamy with some heat and sweet. Good for BBQ party.
