Salad Mistress – Lubovnitsa. There is three popular Russian (Soviet) salads in one – beets and nuts, carrot and raisins, cheese and garlic. In my opinion, once it was not enough space for all dishes on table and someone folded three salads in one. It turned out quite well. It’s still mayonnaise owned cuisine, but come on, don’t you love coleslaw? It’s crunchy and creamy with some heat and sweet. Good for BBQ party.
1 pack cooked beets (about 3-4 small)
1-2 medium carrots
1 tbsp. raisins
1 tbsp. chopped walnuts or pecans
1/4-1/2 cup fresh shredded (or store bought) hard cheese (like Cheddar)
1 garlic clove
4 tbsp. mayonnaise
Soak raisins in boiled water.
Meanwhile shred in two bowls separately carrots and beets (I used Börner Thin Julienne Vegetable Slicer). Mix carrots with one tablespoon mayonnaise and roughly chopped raisins (without water). Mix beets, nuts and one tablespoon mayonnaise. Mix cheese, minced garlic and two tablespoons of mayonnaise. Taste for seasoning. If salads to “dry” in your taste – add some mayo or Greek yogurt.
Put a layer of carrot salad in deep plate, add cheese layer and beets salad on top. Let cool in fridge about half hour. Serve cold.
I added some chopped green onion on top.
