Ground Beef Reuben Melts

Surprisingly good sandwich. I used Russian sauerkraut and homemade Thousand Islands sauce. Recipe adapted from Betty Crocker site.

Yield: 6 sandwiches

1/2 lb lean ground beef
1/4 cup chopped onion (1/2 medium)
2 cloves garlic, minced
1 cup sauerkraut
6 slices dark rye bread, toasted
1/4 cup Thousand Island dressing*
6 thin slices (1/2 oz each) Swiss cheese

Thousand Island Dressing:

1/4 cup mayonnaise
2 tbsp. ketchup
3-4 slices of hot sandwich cucumbers or sweet
2 tbsp. sweet onion, chopped
salt and pepper

Blend all of the ingredients together to form a smooth sauce.

For sandwiches:

Cook ground beef, onion and garlic over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked and onion is tender.

In 1-quart saucepan, heat sauerkraut; drain.

Arrange toasted slices of bread on broiler pan.

Stir dressing into beef mixture. Spoon beef mixture evenly onto bread slices. Top each with sauerkraut and Swiss cheese.

Broil sandwiches 3 to 4 minutes or until cheese is melted and bubbly.
