Plain Crepe Soufflé

My first variation of crepe soufflé – plain and easy way. Thin small crepes and pastry cream with whipped egg white. Very good pastry-like dessert. Inspired by Second version – rye and whole wheat flours chocolate crepes (soft thin waffles) with pastry cream and cherries.


For 9 small crepes

1 cup milk
1 egg
2 tbsp. corn or potato starch
2 tbsp. all-purpose flour
1 tsp. sugar
pinch of salt

Whisk all of the ingredients together. Heat a non-stick pan (I have cast-iron pan) on high-medium heat, spray with cooking spray.

Pour about 1/4 cup of batter (or enough to cover the bottom of pan) into the center of the pan and swirl to spread evenly. Cook for about 30 seconds (until golden) and flip with spatula on the over side. Cook for another 5 seconds and remove to the plate. There isn’t any oil or butter in batter, so spray pan time to time to prevent sticking.04826

For filling I use microwave pastry cream and whipped egg white:

1 cup milk
1 large egg yolk + 1 egg white for soufflé
2 tbsp. sugar
1 tbsp. corn starch
1 tbsp. all-purpose flour
1/2 tsp. vanilla extract
pinch of salt

Mix together egg yolk and pinch of salt, let stay about couple minutes for intensive yellow color. Add sugar, starch and flour, carefully add milk and vanilla extract and whisk well to avoid lumps.

Place in microwave-proof bowl and cook in microwave, uncovered, for 1 minute, whisk well, add one minute more to cook, whisk well and add one more minute or more for thick pastry crème.

Whip egg white for soft peaks, carefully mix with lightly cooled pastry cream. Preheat oven in 375F.

Place pancake darker side up in surface, add some filling in one half and fold with another. Place all half-moon pies into sprayed with cooking spray cookie pan (or two) and bake about 7-8 minutes.

Serve with your favorite syrup or fruits. I made microwave sauce with blackberries.
