Russian Beets (Pink) Thin Pancakes or Svekolnie Blinchiki

Yeah, it’s officially pink. Still plain and tasty crepes/pancakes/blinchiki to celebrate Russian Carnival – Maslenitsa. Served with chopped pickled herring and boiled eggs. It has not very strong beets smell so some seasoning will be great – garlic and thyme for savory and cinnamon and vanilla for sweet variation.

Yield 10 large pancakes

2 small (2.5 inch) cooked beets
2 eggs or 1/2 cup egg substitute
1 cup of milk (I used 2%)
pinch of salt
1 cup all-purpose flour
1/2 cup plain water or seltzer

Place roughly chopped beets, eggs, milk and salt into blender and blend until smooth, whisk with flour and let stay about half hour.

Heat a large non-stick pan (I have cast-iron pan) or crepe pan, spray with cooking spray.

Carefully mix batter with seltzer.

Pour 1/2 cup of batter (or enough to cover the bottom of pan) into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip with spatula. Cook for another 15 seconds and remove to the plate. Continue until all batter is gone. There is no any oil or butter in batter, so spray pan time to time to prevent sticking.

1 pancake is about 65 calories
