Creamy Rice with Zucchini and Cheddar from Rice Cooker

Lunch for one from rice cooker! Creamy and cheesy rice, topped with sunny side up fried egg – delicious! Great for this strange snow/fog day. Inspired by Buns In My Oven recipe. It’s easy to double or triple recipe for sure.

Creamy Rice with Zucchini and Cheddar

Yield: 1 serving

1/4 cup dry medium grain rice (I used Nishiki)
1/2 cup chicken broth (store-bought or homemade)
1/2 cup zucchini, grated
1 oz. yellow sharp cheddar, grated
pinch of garlic salt or garlic powder
1 large egg (optional)

Mix rice with water in rice cooker bowl, place to “Cook”. Right after signal, mix with cheddar, zucchini and garlic;  let stay on “Warm” about 10 minutes. Meanwhile heat small skillet on medium heat, spray with cooking spray and fry egg for perfection.

1 serving (without egg) is about 255 calories
