I tried red pepper relish in BB&B store with tiny toast and love it, but price was not very lovely, so I found easy recipe and made my own red pepper relish. Very good addition for so many meals – from salads to omelets, hot dogs and chicken fingers.
3 large red pepper, finely chopped
1 medium yellow or sweet onion, finely chopped
1/2 cup red wine vinegar
1/4 cup white or brown sugar
2 tbsp. grain mustard
pinch of salt
In medium saucepan combine pepper, onions, vinegar, sugar, mustard and salt. Cook about 20 minutes until relish is thickened but still juicy.
Whole recipe is about 415 calories
