This is not choux pastry, but in this recipe flour mixed with boiled water to make vareniki dough. I made this in July with fresh summer cherries and froze them. Now it is fast and tasty breakfast/lunch for days, when you are really not in mood to cook.
Yield: 20 dumplings
1 cup all-purpose flour
1/3 cup boiled water (or maybe a little more)
1/2 tbsp. vegetable oil
pinch of salt
1 1/2 cup pitted cherry, unfrozen or fresh
Sift flour into mixer bowl, add salt and boiling water, mix fast to make elastic, not very soft dough. Consistency like play-dough. Let it rest, covered, about 20 minutes.
Dust the surface with 1-2 tbsp. flour or grease with a little oil spray. Roll the dough into a long log and cut it into 20 small pieces (about 0.5 oz. each). Roll each piece into a 3-inch circle. Fill each circle of dough with about 1 tbsp. cherries (about 3-4 cherry). Fold circles with filling in half and pinch edges to seal.
Place dumplings into a large amount of boiled salted water and cook until they float to the surface and water start to boil again – about 4-5 minutes. Carefully stir dumplings with spoon to prevent them from sticking together and to the bottom.
Serve vareniki hot with sour cream or butter.
