Turducken Roll with Cranberries and Spinach

I heard so mush about this meal – chicken in duck in turkey, it was very tempting for me. But my family is small and we don’t need so much meat. I made my easy version – Turducken Roll with turkey breast, stuffed with duck breast, stuffed with chicken breast, stuffed with spinach and cranberries. Not without troubles – I lost my twine and used only three silicon bands, so my roll tried to unroll. It was not easy to roll it at all with all stuffing. And maybe I a little over baked it… But it still was a great adventure.

Turducken Roll with Cranberries and Spinach

1 turkey breast on bone with skin – about 5.5 lb
3 duck breast, skin removed
1 chicken breast, halved
1/4 cup fresh cranberries
handful of baby spinach

Soak the turkey in the brine*, covered and refrigerated for up to 24 hours. I used big bag with zip-lock.

Debone turkey breast, leave skin, place into foil skin side down, cover middle part with small fillet. Sprinkle with salt and black pepper. Add duck breast in long side, near middle. Add chicken breast halves on top. Sprinkle with salt and black pepper. Add spinach and cranberries and roll meat into roll, covered with turkey skin. Fix with twine or special bands.

Place with foil into baking pan and bake into preheated (375F in first 15 minutes, than low into 350F) oven about 1 hour or more, until internal temperature of meat became 165F. Remove from oven, cover with foil and let rest about 10 minutes. I add some butter on top before and glaze it after cooking with boiled cider with mustard. Slice with sharp knife and serve hot.

*Brine:

1/4 cup salt
1/4 cup sugar
1/4 orange (mostly peel)
1/4 lemon
thyme and rosemary sprigs

Dissolve the salt and sugar in cold water (about 8 cups), add the orange peel, lemons, thyme, and rosemary.
